  I am from the Ton-That clan too(or to be precise, it's Nguyen Phuoc To^.c now).
  The reason that you only find best Com Hen in Hue is the fact that He^'n, the main ingredience for this dish, can only be harvested in Hue. Hen in the other city, are either not fresh, frozen or from other species of clams.
