Awesome blog you've got here. This for one reason or another is just a great post that for some reason really hit home...food is just so amazingly subjective! I really enjoy pho...never had native viet( must confess, I'm from Orlando which has a large Vietnamese community...but for me the roast duck noodle soup is bar none the tops!), only got to try thai versions of it in SEA, but for me I actually prefer pho without much star anise and more clove and cinnamon! to each his own and that's what makes food and exploration so wonderful! Cheers

Has anyone had phở in Hanoi? They had this peculiar aroma, not necessarily unpleasant, that I just couldn't pinpoint. My friend told me it was MSG, but I've never seen MSG with that taste or smell.

Pho 24 is awful. No offenese, but i blame Viet Kieu for that.
It is so cool that The Gastronomer like Beef Tripe.
Astronomer, welcome to the land of Na.m . I love it more than the Ta'i. It is rainy in Florida right now due to some tropical storms and your entry made me want to have Pho*? so badly.

That looks awesome. Did you ever tried Pho 24? we were there 2 weeks ago at the store on Le Thanh Ton St, and it was awful, absolutely no taste. Maybe we just had a bad luck that day.

WoW the nuoc beo aka fat floating in the broth is so essential in the overall flavoring of the soup. That is where all the good stuff mingle together to explode when it hits the back of your palate. Despite the weather here I sure as heck want a bowl of pho right now! ;-)
