Tết Đoan Ngọ

Asians are a ritualistic bunch.

This past Sunday was the fifth day of the fifth month of the lunar calendar. The “double fifth” day represents the summer solstice in the Northern Hemisphere. The Chinese celebrate with dragon boat festivals, the Koreans have Dano and the Japanese recognize kodomo no hi.

In Vietnam, we celebrated Tết Đoan Ngọ:

Tết Đoan Ngọ (literally: Tết: festival, Đoan: the start / straight / middle / righteousness / just, Ngọ: the seventh animal of the Chinese zodiac- the horse), Tết Đoan Dương (Dương: yang), Tết Trùng Ngũ (Trùng: double, Ngũ: the fifth), Tết Đoan Ngũ, Tết Trùng Nhĩ or Tết Nửa Năm (Nửa Năm: a half of a year) is a festival celebrated at noon on the fifth day of the fifth lunar month. This day is the day when the Great Bear star’s tail direct exactly to the south. At this time, the universe brings the greatest amount of yang yi in the entire year. Therefore, creatures and people must become stronger in both their health and their souls to overcome this.

Ba Sau (my grandma’s sister) invited us over to her home to celebrate the holiday with a midday feast. We indulged in sticky rice, barbecued pork, banh hoi, chicken porridge, boiled chicken, bo bia, fried rice and goi.

The two traditional foods of the holiday are banh u and com ruou. Banh u are pyramidal sticky rice cakes wrapped in banana leaves. They are oftentimes stuffed with mung beans, but the ones we had at Ba Sau’s were plain, so we dipped them in sugar. The banana leaf essence is the dominant flavor.

Com ruou, which literally translates as “rice wine,” are little balls of fermented rice bathed in wine. My aunt told me that com ruou is eaten early in the day to fight the “worms” in one’s stomach. In addition to being ritualistic, the Vietnamese are also very superstitious! Com ruou is very strong and quite delicious. I think the worms in my stomach were properly extinguished after consuming three balls.

The Astronomer and I are thankful to have Ba Sau in Saigon to introduce us to these wonderful local foods, traditions and customs. She’s the best!

Eating in Nha Trang III

On our final day in Nha Trang, we did a bit of sightseeing and mud bathing. We spent the morning hours seeking out the city’s famous giant Buddha, but stumbled upon a small Buddha first.

At last! We found the giant Buddha.

The temple grounds were adorned with signs engraved with the Buddha’s teachings. This one was one of my favorites—speak like the Buddha, think I like Buddha, work like the Buddha.

Before jetting off to the mud baths, we bought some xoi chien to snack on. They were filled with “meat” that resembled the stuff Taco Bell serves up. Texturally interesting, but not all that tasty.

After our therapeutic mud session, we bought some good ‘ol banh mi and swam in the ocean one last time before catching our flight back to Saigon.

For dessert, Matt and I shared a caramel sundae from an ice cream shop by our hotel. The whipped cream tasted like artificial butter flavoring, which we liked a lot.

Just as we landed in Saigon, I received a call from Ba Sau (my grandma’s sister) inviting me over for dinner. When Ba Sau calls, I always oblige. We ate a lotus stem salad with shrimp and pork…

Eating in Nha Trang I

After suffering through his first Boston winter, we treated our friend Matt to a trip to Nha Trang during his week-long stay in Vietnam. The goal of the trip was to nosh, relax and “get brown.”

By the way, Nha Trang will be the site of this year’s Miss Universe Pageant and the picture above is a billboard counting down the number of days until The Donald comes to town.

Unlike the Jersey Shore, the beaches in Nha Trang are peaceful and empty. The funny thing about Nha Trang is that the waves roll on to the shore sideways. The Astronomer and I took a dip as soon as we arrived, while Matt soaked up some rays because he’s not much of a dipper.

After beach time, we walked toward Nha Trang’s major market. On the way, I bought 100 grams of xi muoi Thai. I usually avoid xi muoi because it is oftentimes too lip-puckeringly sour, but this version was just right—salty and sweet. I also bought 100 grams of me Thai because I am addicted to sugar coated tamarind candies.

We arrived at the market in the middle of the afternoon, which wasn’t the smartest because it was pretty much deserted and the vendors were napping.

Our first stop at the market was at an alfresco joint serving up bun sua—rice vermicelli noodles with jellyfish. It turns out that jellyfish isn’t all that exciting. I would say that it’s definitely more texturally interesting than it is flavorful. The broth was clear and mild and the cha and tomatoes came through where the jellyfish lacked.

Since Matt had never tried nuoc mia (sugarcane juice) we ordered him a tall glass.

Next we moved on to a che vendor. So many choices, so little time…

The Astronomer and Matt tried the che bap, which was warm and good, but a bit too sweet.

I had the che troi nuoc because it’s one of my favorites. Everything was exactly on point, down to the sprinkling of toasted sesame seeds. The mung bean paste inside the tapioca balls was just the right among of salty to contrast with the overall sweetness. Mmm!

As we enjoyed our che, Matt spotted a bunch of live roosters hung from a motorbike. They were surprisingly quiet as a result of all the blood rushing to their heads. Poor guys.

Xoi! I seriously can’t pass a xoi vendor without buying some and dropped 3,000 VND on a small bag of xoi gac. The sticky rice was more oily than usual and a really vibrant orange.

While I munched on my newly acquired xoi, The Astronomer and Matt downed two bowls of mediocre mi quang—too much broth and too little zing.

The Astronomer and Matt have ridiculous metabolisms and are thus able to munch on cookies all day and still have killer abs. I, on the other hand, must participate in street aerobics and run daily to maintain my physique.

After the market, we walked to see the Cham towers. This is a view of the bridges of Nha Trang from the towers.

For our first dinner in the city, we dropped in at a large seafood emporium. The food wasn’t great, but we left stuffed and satisfied enough. Our first course was a jellyfish salad served with rice crackers.

Our second course was sweet and sour squid. The seasonings were meh and the squid was not Phu Quoc-tender. On a postive note, the pineapple chunks were tasty!

Our penultimate course was braised catfish in a claypot. This dish was the standout of the evening and different from the ca kho I’ve eaten in Saigon due to the generous employment of ginger.

And lastly, stir-fried noodles with seafood. Ho hum seafood makes for a ho hum noodle dish. However, a dousing of caramelized sauce from the ca kho turned things around.

Eating in District 4

The Astronomer and I have taken a good number of friends and gas•tron•o•my readers on food tours of District 4, but never took ourselves on one until last Saturday.

While we usually stick to Ton That Thuyet Street, also known as the “corridor of temptation,” we decided to venture into unchartered waters on this trip. I started off the tour with a cool hunk of Vietnamese JELLO from my regular dealer, while the Astronomer dug into a bowl of bun thit xao (10,000 VND). The Astronomer has eaten countless bowls of bun thit nuong, but this was his first bowl of its sister dish.

What sets bun thit xao apart from its well-known sibling is how the meat is prepared. Rather than grilled, these slices of lemongrass marinated pork are pan-fried with tomatoes and onions. The Astronomer liked this dish just as much as his old standby.

As The Astronomer finished up his noodles, a vendor selling pickled fruits and green mangoes rolled our way. During a conversation with my mom a few months back, she mentioned that green mangoes dipped in fish sauce were a divine treat that I needed to try. I ordered half a mango (2,000 VND), which the vendor sliced up and served with a cup of sugary fish sauce with chilies.

While I can’t say I prefer this combination over ripe and juicy mangoes eaten straight up, the intermingling of tart, sweet, spicy and salty flavors were very good.

The fish sauce dip was syrupy thick, spicy and contained a heap of undissolved sugar to mellow out the sour mango.

Next, I went for a super-tall cup of sương sa hột lựu (3,000 VND), which is a variety of che that contains black beans, green tapioca strands, pomegranate seeds, agar agar, coconut milk and crushed ice. Although seemingly harmless, the hefty cup of che filled me up quite a bit.

In between bites, we saw a statue of an angel viciously stabbing something or another. Yikes. I thought angels were peaceful beings…

The Astronomer ducked into an awning-covered stall selling bun dishes and cha gio for his second and third course. The cha gio (2,000 VND each) were surprisingly crisp for having sat around for awhile. The rice paper wrapping was golden and blistered, while the innards were porky and well-seasoned. I detected some taro root in the mush of innards as well. Mmm, just like Bà Sáu‘s.

He followed up the two cha gio with another bowl of bun. This time around, it was bun thit bo la lot (14,000 VND). Bo la lot are savory morsels of grilled meat wrapped in betel leaves. Each bite is slightly sweet and very fragrant.

While exploring the hidden alleyways in District 4, we found a giant “rock cave,” also known as a nativity scene. It was connected to a rather impressive Catholic church complex undergoing renovations.

While my heart doesn’t skip a beat for doughnuts the way The Astronomer’s does, banh cam (1,000 VND) still has a very special place in it. We bought two and happily scarfed them down while zigzagging through our ‘hood.

Even though we were both quite stuffed at this point on the tour, I couldn’t pass up the opportunity to sample bánh ít trần (5,000 VND). This dish is a savory version of one of my all-time favorite desserts, che troi nuoc. Bánh ít trần are medium-sized tapioca balls stuffed with mung bean paste, topped with scallion oil and pickled carrots and daikon, and served in a sweet fish sauce with coconut milk.

All of the usual Vietnamese food suspects are present and accounted for—sweet, sour, salty, sticky, chewy and awesome.

As we neared home, I spotted a vendor selling goi cuon (fresh spring rolls) for 1,000 VND a piece, which is ridiculously cheap even by Vietnam standards. The Astronomer ordered two to see if they were any good. Although they were missing the quintessential boiled shrimps, these spring rolls were not the least bit shabby.

For my final course, I ate some xoi gac (gac fruit sticky rice – 2,000 VND) that I procured earlier. Although I’m not one-hundred percent certain, I’m pretty sure the vendor uses actual gac fruit rather than coloring because I sometimes find gac seeds in my xoi. However, the color does strike me as a bit artificial. The crushed peanuts atop the xoi are a tasty touch.

Even though The Astronomer and I have lived in Vietnam for quite some time, we’re still floored by how inexpensive delicious food is. Our afternoon food tour of District 4 set us back $3. That’s crazy business.

Eating in Hanoi II

When visiting Hanoi, my primary culinary objective is to sample my favorite northern Vietnamese dishes in the land of their creation or, better yet, try something I’ve never seen or even heard of in the south. The first meal of my latest visit was a late lunch. I was absolutely starving after an hour plus run and no food since 8 a.m., so when my intended destination turned out to be a tourist trap, I blindly stumbled into a wanton soup eatery. The place was basically empty, but it was definitely not peak hours, and I justified my choice to myself in light of the above rule by noting that wantons and dumplings are a Chinese import, and Hanoi is a lot closer to China than Saigon.

I was also intrigued by the northern spelling of wonton: van than instead of hoan thanh. Nevertheless, I ended up ordering sui cao my. I found it rather disappointing—the sui cao themselves were good, with nice peppery seasoning, but I was only given three. Bland slices of pork made up the majority of the meat in the dish, and the broth was nothing special. Sadly, it seems my judgment was clouded by hunger when I chose this place.

Fortunately, I was more than ready to seek redemption in the form of a second course. I headed for a mien luon spot recommended by my Rough Guide tour book (as noted previously, their Hanoi street eats section is surprisingly insightful). I ordered the mien nuoc—thin glass noodles and crispy mini eels in a broth with fried shallots, bean sprouts, and scallions. Now this was the sort of eating experience I was looking for—I’m not sure whether this dish is even of northern origin, but it was certainly different than anything I had eaten before, and pretty darn delicious. The broth reminded me of a good hu tieu mi—sweet and salty and crying out to be drank when the noodles were gone. The dried eels were interesting—kind of like the fish-skin chips The Gastronomer and I sampled once at the Chinatown business expo. I had expected little pieces of big eel in the soup, but these were entire animals I was gulping down—the eel equivalent of the dried mini-shrimps used in xoi man.

Dinner found me wandering again, but this time at a more thoughtful pace. I found a winner in Nguyen Huu Huan Street. First I stopped at a massive sticky rice establishment. The Gastronomer has tried quite a few varieties of xoi on Ton That Thuyet Street, but this was a whole different story—it seems the northerners take their xoi pretty seriously. Slightly overwhelmed, I glanced around at what people were eating before pointing at some sort of loaf and saying, “sin cho toi mot to xoi cha.” As it turned out, xoi cha (or at least this variety—there were definitely several kinds available) consisted of yellow sticky rice topped with shreds of hardened mung bean paste, fried shallots, and the cha itself. I made little progress discerning what the loaf was made of, but it was a bit chewy and surprisingly sweet. I don’t usually love sweet xoi, but the ingredients of this one melded perfectly. I almost ordered another bowl, but another stall down the street was calling my name (“Astronomer, Astronomer…!”).

This one was run by a father and his three sons and served a mostly male clientele. On display were a number of pastries deep fried to order; I decided it was time to sample another banh goi. The pastry itself was similar to the first banh goi I tried, but the components were more evenly distributed inside, and the spicy dipping sauce, which looked remarkably similar to the broth for bun cha but tasted entirely different, was a welcome addition.

I also ordered a plate of pho cuon. When they came out, I wasn’t sure if I was supposed to dip them in the same sauce, but I decided to go for it. No one stopped me, and they went together wonderfully. When The Gastronomer and I tried pho cuon down south we were underwhelmed, but these were really spectacular. Filled with plenty of ground beef and copious mint leaves, they were quite tasty without the sauce and even better with it. I’ll definitely have to return for more.

I capped off my dinner with a couple of pastries from one of the small French-influenced bakeries that are everywhere in Hanoi. The chocolate tart turned out to contain coffee, which was a disappointment, but the lemon tart (R) was awesome.

Day two began with an ultra-simple breakfast of bread and jam at the Prince II hotel. The baguette was one of the best I’ve had in Vietnam, with a soft crust and substantial exterior. Afterwards, I was still a bit hungry, so I bought a chocolate-filled pastry from a street vendor. I bargained the price down from 10,000 VND to 5,000 and then made the purchase despite knowing that I should have paid no more than 3,000. She aggressively tried to sell me additional pastries and even a trip to Ha Long Bay, but I declined. When I got back to my room and took a bite of the pastry, I found that there was in fact nothing inside. I hate being a tourist.

Despite my previous resolution to try something new every meal, when lunchtime rolled around I was really in the mood for some bun cha. I checked out Dac Kim on Hang Manh Street, recommended by Wandering Chopsticks and advertised as Hanoi’s most famous bun cha restaurant in the Rough Guide, but it was closed. Perhaps 1:15 in the afternoon was too late? Luckily, I was only a few blocks away from Dac Kim II, and I couldn’t resist going back (side note: I’m not sure if one of these restaurants copied the other, or if they actually have the same owners. I walked by a third Bun Cha Dac Kim in the Old Quarter the day before. Oh well, if they’re all good, what does it matter?). The nem cua be were even better than I remembered them, and the bun cha was also satisfying, although I felt like I received an inferior ratio of juicy sausages to chewy meat strips this time.

All in all, another successful business trip to Hanoi. Next time I look forward to trying pho xao, northern banh cuon, and maybe some barbecued bird.
