Cranberry Banana Bread

  • 1/2 cup maple syrup
  • 1/2 cup unsweetened applesauce
  • 4 very ripe bananas, mashed well
  • 1 1/4 cup dried cranberries
  • 2 cups whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt

Preheat oven to 350°F. Butter 9×5 loaf pan. Sift together flour, baking soda, salt and spices. Add cranberries. Mash the bananas and add all the wet ingredients. Add the wet ingredients to the dry. Mix well. Pour batter into loaf pan. Bake for an hour.
